Recipe: Chicken Patties and Vegetables

Ingredients:

Patties

• 1 lb ground chicken

• 1 tbsp chopped green onion

• 1 tsp chopped parsley

• ½ tsp salt

• ¼ tsp cayenne pepper

• ½ tsp chili pepper flakes

• 2 tbsp fresh garlic, minced

Salad

• 1 small cucumber

• ½ avocado

• Cup of cherry tomatoes, halved

• 2 lemon slices

• 2 tbsp chipotle aioli

Instructions:

1. To make the chicken patties, combine all ingredients in a bowl and gently mix until everything is combined. Do not overwork.

2. Heat 1 tbsp oil and 1 tsp butter in a skillet over medium to high heat and divide chicken into 6 equal patties. Sear patties in skillet for 5 to 8 minutes each side, making sure that they are crispy on the outside and that the internal temperature reaches 160 degrees F.

3. Put all other ingredients on plate beside pattie.

4. This meal can also be prepared in advance and used for a picnic lunch.
