Turkey And Brie Crostini Appetizers

Appetizers are an artistic interpretation of cuisine which first appeared in North America in the mid eighteen hundreds.

Primitive versions of appetizers would have been consumed long ago by hunter-gatherers in the form of seeds, fruits, tiny portions of snails, sea urchins, and pickled cabbage.

In one form or another, appetizers or finger foods have popped up in every civilization. There are no rules for the preparation of appetizers other than not to combine too many foods in one tidbit or nibble.

The Turkey and Brie appetizers use crostinis as a base, which are thin slices of bread brushed with olive oil and toasted. Crostinis can be served with soups, salads, dips, cheeses, and flavourful meats.

Prep Time: 40 minutes

Cook Time: 12 minutes

Servings: 10 pieces

Ingredients:

  • One French baguette
  • ¼ cup olive oil
  • 10 thin slices of deli turkey
  • 10 thin slices of Brie cheese with rind removed
  • 1 cup of whole cranberry sauce
  • ½ cup of drained mandarin orange segments in light syrup
  • Rosemary sprigs for garnish (optional)

Directions:

  • Pre-heat oven to 350 degrees Fahrenheit. Slice baguette diagonally into approximately ¼ inch thick pieces. Lightly brush olive oil on both sides of bread slices and place on baking sheet. Bake for 12 minutes or until crostinis turn a light golden colour. Remove from oven and let cool.
  • Arrange 10 crostinis on a platter and place one slice of Brie on each one. Next fold turkey slices twice and place on the brie followed by a teaspoon of cranberry sauce. Garnish with mandarin oranges and small sprigs of rosemary.
  • Store leftover crostinis in an airtight container for up to five days at room temperature.
